Recipe for Homemade Baked Oatmeal!

My husband and I recently were victims of the Whole30 Diet.  It was miserable, horrific, and…beneficial.

I admit it…as not fun as that Whole30 nightmare was, we really did see some good things come from it.  We both lost some weight, we were both full of new energy, and we permanently changed a few things in our diet.

One of those permanent changes that we made to our diet was to (gulp!) cut out cereal.

Cereal…that most satisfying, delicious, and quickly-attainable of foods.  Oh cereal…you single-handedly guided me through my college years; you rescued this exhausted new momma from having to cook anything for my family; and you are often on sale at Publix.

And now I am turning my back on you.

In all seriousness, though, cereal was one of the three staples in our old diet that we decided to give the boot.  That, sandwich bread, and as much cheese as possible.  Obviously, we are a carb-loving, cheese-consuming family.

So now that we are cereal-free around here, what in the world do I do for breakfast??

That problem hit me square in the face when I woke up the day after our big “No More Cereal” decision with no breakfast readily available in my kitchen.

So I researched, I Googled, I read blogs…and I decided that I wanted us to become more of an oatmeal-eating family.

So here is my recipe for absolutely delicious, absolutely good-for-you Homemade Baked Oatmeal.  Enjoy!

Ingredients:

  • 2 cups rolled oats
  • 1 cup steel cut oats
  • 2 beaten eggs
  • 1/4 cup coconut oil (melted)
  • 1 cup almond milk
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • chopped pecans (optional)
  • pure maple syrup (optional)

Directions:

  1. Mix together oil, sugar, and eggs.Recipe for Healthy Baked Oatmeal
  2. Add rest of ingredients except for maple syrup and have your 2-year-old mix thoroughly.

  3. Pour into a greased pan.  Drizzle top with maple syrup.Recipe for Homemade Baked Oatmeal!
