Recipe for Whole30 Brownies - Time to eat

This recipe is one giant leap for mankind.

I thought it couldn’t be done.  Whole30 brownies?  But it can.  And I’m going to share all about it with you.  🙂

I’m on my second round of the Whole30 diet…so I guess that puts me somewhere around day 48 of this 30-day food “experience.”  And to be totally honest, I’m going to concede a little and say that I’m actually starting to enjoy this Whole30 diet.  (Or maybe it’s the results that I’m starting to enjoy.  🙂 )

But I could be on day 253 and I would still say that the Whole30 is hard!  No dairy.  No grains.  No sugar.  No joy…okay, a little dramatic.  🙂

Well, as of one week ago, life under Whole30 regulations has become much more bearable.  I recently stumbled upon this recipe for beautiful, chocolatey, wonderful, miraculous, Whole30-appropriate BROWNIES!

Like I said…I thought it couldn’t be done.  But here’s the proof!

Ladies and gentlemen:  I give you the Recipe for Whole30 Brownies!!

Ingredients:

Recipe for Whole30 Brownies - Ingredients

  • 1/2 cup coconut flour (this can be found with all the bags of Red Mill stuff at Publix)
  • 1/2 cup unsweetened cocoa
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 5 eggs
  • 1/3 cup melted coconut oil
  • 3/4 cup honey
  • 1 tsp vanilla
  • 2 tbsp coconut milk
  • 1/2 cup all natural peanut or almond butter

Directions:

  1. Preheat oven to 350.  Grease an 11×7 baking dish.
  2. Whisk together the dry ingredients until thoroughly mixed.  Set aside.Recipe for Whole30 Brownies - Mix dry ingredients

  5. Add the oil, milk, honey, and vanilla and beat the tar out of it for a couple of minutes.Recipe for Whole30 Brownies - Add wet ingredients

  7. Pour half of batter into pan.  Plop the peanut/almond butter on top and attempt to spread around.  Top with remaining batter.Recipe for Whole30 Brownies - Add the peanut butterRecipe for Whole30 Brownies - Ready to bake
  8. Bake for 25-30 minutes.
  9. Enjoy!

You are not going to believe these brownies…they are so good!  Flourless, sugarless, dairyless…who would have thought?

And I told myself that since they are so healthy for me, I could eat 3 times the normal allotted amount.  🙂  (Because “not bad for you” is the same as “good for you”, right?)

    Just so you know, this is not really Whole30 legal. Peanuts and honey aren’t okay on whole30.

      Hi Rae, thank you for bringing attention to this. You are right about the peanut butter…it is not allowed in the Whole30 or the Paleo diet. I still eat peanut butter though, and chinese black rice for that matter, when I am on the Whole30 while nursing (because I need the extra calories). But in the ingredients list, I listed it as peanut / almond butter, meaning either. Almond butter is fine on the Whole30. As far as the honey goes…I totally should not have named these brownies Whole 30 and Paleo appropriate! They are strictly Paleo brownies…you are right about no honey on the Whole 30. Guess I’ve been on the Paleo30 for a while now. 🙂
      I’ll get on that Blog Post Title change now…

        could you sweeten with dates or figs or applesauce instead of honey?

            Oh my, I couldn’t tell you an exact number. I ground them up until I had maybe 1/4 cup??

      I tried this recipe and used unsweetened apple sauce and walnuts and it came out really good

    Sub 1 1/2 cup pitted dates, added 2 squares of bakers chocolate (add it to melted coconut oil while it’s still warm) Blend dates, coco oil/chocolate, coco milk, vanilla till smooth (I used a processor), Add frothy eggs to mix, blend “the tar out of it” (till smooth) add to dry ingredients.
    I also subbed Sunbutter (sunflower seed butter) instead of nuts, for my nut allergic nephew. Hint, whipping the seed/nut butter makes it spread, if you want what I’m calling “Funny Bones Brownies” Whole 3 compliant, completely.

    Neither peanut butter nor honey is allowed on Whole30. Neither are concocted desserts like this… it defeats the whole purpose of the dietary reset and way of looking at food, nutrition, and how we eat. Paleo – ok, but not at all Whole30 compliant.

    I used unsweetened apple sauce and walnuts instead of the peanuts and honey and it came out really good
