The Best Paleo Chicken Noodle Soup

I am a complete noodle snob.

Not a snob like, I-enjoy-correctly-pronouncing-noodle-names-with-Giada-De-Laurentiis type of snob.  More like…I-love-all-pasta-all-the-time-as-long-as-it’s-actual-pasta snob. The more butter and salt… the better.

As a self professed snob of noodles, you can only imagine how unwelcome an imposter of noodles can be.  Healthy… carb-less… gross.

Until the day my husband gave me a spiralizer…

You never KNEW how many crazy things you could make into noodles!

So what’s the first thing I did?  Remake one of my most favorite recipes:

 CHICKEN NOODLE SOUP

I changed absolutely nothing about my personal recipe, except the noodles, which in this case is zucchini.

The verdict?  Absolutely fabulous.

If you are a noodle junkie like myself, or even a lover of a good hot bowl of chicken noodle soup, you will absolutely love this recipe.

Paleo Chicken Noodle Soup:

Ingredients:

1 whole chicken

3 carrots, peeled cut into bite size pieces

2 stalks of celery (sometimes I use celery seed)

1 onion diced

3 zucchini peeled

salt to taste

1/2 tsp dill weed

1 tsp parsley flakes

1 tsp ground coriander

1 tsp garlic powder

1 tsp paprika

1 tsp Alessi Dipping spices

  • First, rinse your whole chicken and place it in a pot of water to boil. Add in your carrots, celery, and seasonings.  Bring to boil and reduce to simmer for about an hour.

  • After the chicken is cooked through, remove from the pot and allow it to cool so you can remove the meat from the bones.  Then add the meat back in to pot.
  • About 20 minutes before serving, prepare your zucchini.  Peel it and spiralize it.

  • Add the noodles to the soup to cook for about 5-10 min.
  • Serve immediately!

      Great question! You can spiralize onions, cucumbers, apples, cabbage, butternut squash, sweet and white potatoes, carrots, yellow squash and of course zucchini! Im really just getting started with the creativity of it all, but it’s been really fun. I’m sure there are many more vegetables and fruits to use, but these are just a few off the top of my head! My mom has one too so we go back and forth with fun ideas! Thanks for the question!

    This looks great! Do you put the zucchini in the soup for the last 20 minutes ? Does it have texture like “real” noodles? ( speaking as another noodle snob).

      Yes! The last 5 or 10 minutes add the noodles in. You want them to be hot and cooked but NOT mushy. I personally don’t really care for the flavor of zucchini in most situations, but because the broth is seasoned the zucchini just add a great texture and taste great!

    Can you use all these even in making spaghetti etc? Would you just boil for 5-10 min?

      You have to peal the zucchini and spiralize it. Salt the noodles and put them on a paper towel for about 15 or so minutes. Heat up a pan with a little butter or oil on medium high. Allow the pan to get completely hot before adding the zucchini noodles. Add the noodles to the hot pan for only 1 to 1 1/2 minutes. Then serve immediately. To me this is the best way to make spaghetti noodles with zucchini. Enjoy!
